Spicy Parsnip & Potato Soup
Delicious warming and perfect for using up leftovers on a winter's afternoon.
Hey everyone,
Thanks for coming to visit, lots of wildly desired and slightly ill fated days off after Christmas lead to only one thing, and that's making soups for lunch. Well other things too, but for here I'm going to focus on the soup for lunch.
Below I have outlined a recipe we adapted from a Jamie Oliver original to make a nice thick warming soup as the snow is falling this afternoon. It's nice and simple and doesn't take more than about 20 minutes including cook time.
Ingredients;
Olive oil1 Knob of butter
1 Large onion, peeled and roughly chopped
2 cloves of garlic, peeled and roughly chopped
1 Thumb size piece of fresh ginger, peeled and roughly chopped
1 tbsp Garam Masala
3 Medium Parsnips peeled and chopped into chunks
3 Large potatoes peeled and chopped into chunks
300ml Semi skimmed milk (or coconut milk if you're a bit wilder than I am for a nice twist)
600ml Vegetable stock
Sea Salt
Freshly ground black pepper
1 fresh red chilli, de-seeded and finely sliced.
Fresh coriander (stalks separated and leaves kept as garnish)
Fresh crusty bread (I use a part baked baguette cooked as per the packet instructions)
Method;
1. Heat a splash of oil and a knob of butter in a large saucepan, then add the onion, garlic, ginger and garam masala, fry for around 10 minutes until softened.
2. Drop in the parsnip and potatoes and stir until they are coated in the lovely flavours you have been making with the spice so far.
3. Pour in the milk and stock, season well, bring to the boil, turn down the heat and simmer for around 20 minutes (lid on) until the vegetables are cooked through.
4. Remove from the heat, add the coriander stalks and whiz up carefully using a hand blender.
5. Taste the soup and adjust the seasoning to your taste.
6. Serve with the coriander leaves and sliced chilli as garnish, with the crusty bread on the side. I like to use a part baked baguette cooked in the oven whilst the soup is simmering to get a nice fresh bread feel with minimal effort.
