Taryn's Prezzo king prawn spaghetti

Hi all, 


Usually, I wouldn't frequent a chain Italian restaurant, however from time to time it's nice to go somewhere you know exactly what you're going to get (wow, I really am old now).  This is why we sometimes pop to the local Prezzo and usually have the same delicious prawn spaghetti with garlic, red onion, spinach and chilli.  We served with a garlic pizza bread as I always have serious fear of there not being enough food, it did work very well. 

Here we have reconstructed said dish so now I can make it at home, in my slippers, thus completing the transition to old man. 

Recipe below




Ingredients; 

200g Spaghetti
1 Tbsp olive oil
1 Red Onion (sliced)
2 Garlic Cloves (finely chopped)
One red chilli (de-seeded and finely chopped)
500ml good quality Passata 
1 tsp Sugar
1 tsp ground black pepper
Salt to taste
100g of fresh baby leaf spinach
170g of cooked king prawns
Fresh Parsley for serving
Parmesan for serving


Method;


1. Boil spaghetti as per packet instructions
2. Meanwhile, fry the red onions until soft (usually around 5-7 minutes) and then add the garlic and chopped chilli and fry for another 1 minute. 
3. Add the passata and season with the sugar, pepper and salt and simmer until thickened slightly. 
4. Add in the spinach and wilt down.
5. Add the king prawns for just 2 minutes until heated through - if they are left too long they will be chewy. 
6. Drain the spaghetti and add to the plate topped with the prawns and sauce. Serve with fresh parsley and Parmesan, don't forget to grate your Parmesan finely from a height, it looks more pro this way.
